EBLEX Launches New Lamb Yield Guide

UK - Traditional lamb cuts account for 35 per cent of the yield from the animal, according to a new EBLEX publication aimed at helping maximise carcase value throughout the supply chain.

The Lamb Yield Guide, which provides information for each stage of the production process, also highlighted that fifth quarter products amount to 53 per cent of the yield from the animal as a whole, with bone, fat and drip loss accounting for the remaining 12 per cent.

Traditional lamb cuts include prepared bone-in cuts and joints as a percentage of the carcase, while fifth quarter products include variety meats, offal, edible co-products and animal by-products.

The launch of the publication follows on from the success of EBLEX’s Beef Yield Guide and features a useful lamb carcase classification chart, highlighting the specific conformation and fat class requirements required for lamb to comply with EBLEX’s Quality Standard Mark (QSM) Scheme.

EBLEX business development manager Dick van Leeuwen, said: “It is the latest addition to our series of knowledge transfer materials to help add value to the lamb carcase. It does this by highlighting cuts which will maximise usage of the carcase and reduce wastage. The guide clearly demonstrates the significance of fifth quarter products and how they add value to carcase utilisation.”
